Carrot. Cake. PANCAKES!

A few weeks ago, I invented the ultimate pancake experience; Carrot Cake Pancakes! It was heavily influenced by several recipes in VWAV, but the concept? Mine, all mine!

Carrot Cake Pancakes of the Gods:
1 1/2 c. flour
1/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. soymilk
1/4 c. vegetable oil
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground allspice
1/8 tsp. ground cloves
1/3 c. coconut
1/4 c. walnuts, broken into small pieces
(I would have also added 1/4 c. raisins if I'd had them.)
1 1/4 c. carrots, grated

Mix together:
Ladle onto hot griddle. Cook until bubbles start to form, then flip.

Serve with real maple syrup. (Like anything else even exists for me anymore... I'm such a snob!)

Eat until very happy!

Crafty Day equals Shopping Day?

Apparently this month, the answer is a resounding YES! Jo-Ann's was having a sale this weekend, the likes of which I have never seen before. Many things on sale? yes. Baskets 40% off? Yes. Patterns $1.29 each? Yes. (and Simplicities were $1 each today) Oh, and AN EXTRA 25% OFF OF EVERYTHING, AFTER DISCOUNTS, AND EVEN IF THEY'RE ALREADY ON SALE? Yes. It was freaking nuts. So nuts that, I paid for something I didn't even buy. So, I went back today, got my refund, and bought some of those aforementioned $1 patterns. Because I'm crazy like that.

Here is my new fabric stash:

Clockwise from left: blue/brown cotton for a dress, gold brocade for a pillow, gorgeous fleece for pyjama pants, coral print for a dress, gorgeously soft cotton for a cape/jacket, beautiful peacock brocade for a skirt (even though I keep picturing a jacket in my mind) that was so lovely; I bought all that was left. (it was only about 5 inches more than I needed, but still!)

Receipt from yesterday. Today's receipt says I saved another $86.30! I don't know anyone who buys patterns at full price, but they do them $1 each often enough that I just never do it any other way.

Cape for the plaid, pants for the pyjamas, ready made castle house for future children (or just us)....

And in here? Possibly a costume for John as the future Earl of Sandwich!

Adventures with Brownie Mix

A few weeks ago, I got this brownie mix from Trader Joe's.

Today I decided to make it, but me being me, I had to tweak it a bit. First off, it called for an entire stick of melted butter. Really? 1/2 a cup of butter? I added 1/4 cup + 1/2 cup applesauce.

Then I wanted to add 500 things. Like coconut. Or walnuts. Or caramel. Or raspberries! Raspberries won. (I thawed some frozen ones, then drained out most of the liquid, and then smushed out some more liquid so they were relatively dry.) I added them in small spoonfulls, then swirled them into the batter.

This lower-fat version took about an extra 15-20 minutes, but it was totally worth it.

Verdict? Very tasty, and only stuck to the pan a little bit!
