A while ago, I discovered that PCC sells vanilla beans for super cheap. So, I bought a few, and then didn't know what to do with them. Other than slicing them open and leaving them in liquor for a few months to make extract, you can make vanilla sugar!
Get a jar. Put some sugar in it. Slit open the beans, and submerge them in the sugar. Leave them in there for a month or more. Surprise! Vanilla sugar. Use it in your coffee or tea, on oatmeal, or anywhere else you might taste its mild flavor. (Ice cream anyone?)
