It's like Kung Pao Chicken BUT VEGAN! And... it was so ridiculously easy, I must share it with you. First, locate these types of sauces: sweet chili sauce and sriracha (known in our house as "cock sauce")
Then, chop up a carrot, a zucchini, half a leek, and get half a package of Ficken (that's Fake+Chicken). Stir fry these things together, then add in 1 Tbsp soy sauce, about 2 Tbsp of sweet chili sauce, two shakes of powdered ginger (less than 1/4 tsp.), and a good dash of the cock sauce (probably about 1/2 tsp. to 1 tsp. total, depending on how spicy you like it.) Add 1/2 c. frozen peas, and about 1/4 c. water. Cook for 15 minutes or so, until the zucchini is soft and the carrots are cooked. Then add in 1/4 c. peanuts. Stir fry and eat!!!
It was especially delicious on top of the leftover chowder. John declared it, "The best zucchini I've eaten in my entire life!" I think that's a pretty good compliment!
