I have been SO excited about this cookbook (and this one too) for months! Since Happy Herbivore still isn't out, I have been spending every week since Christmas devising menus from A.F.R. and I have to tell you, it is fantastic!! So far I have made (in order of deliciousness): Eggplant Mole Chili, Red Thai Tofu, Pineapple Bhutanese Rice (although with basmati instead), Thai Basil Green Beans, Caribbean Curried Black-eyed Peas with Plantains, Califlower Pesto Soup, Ginger Mashed Sweet Potatoes and Apples (I used pears), Everyday Tofu, and Miso Tofu. Up for today is Butternut Squash Coconut Rice and Blackened Tofu. There are so many things I've tagged in this book, I had to start color coding them! So, if you are looking for something both healthy and tasty to add to your life, you should RUN (not walk) to buy this book!
