Polenta is becoming one of my new favorite things to cook. It's quick, easy, and TASTY! I even like how it sets up in the shape of your pot after you let it sit for awhile. In this week's class, we made cheesy polenta and 3-bean chili. I went home after class, and made even more polenta!
2 1/2 cups water
1 vegetable bouillon cube
1 cup polenta
2 oz. cheddar cheese, grated
Paprika or Chile powder (optional)
In a saucepan, bring the water to a boil. Add bouillon cube and stir. When cube is dissolved, add polenta and stir. Let cook for 1-2 minutes, then add cheese. Sprinkle with paprika or chile powder. Serve hot!
